Southwestern Cauliflower Rice

Today I’m sharing my southwestern cauliflower rice recipe. Be sure to try this one out and let me know your thoughts!

I recently felt like I was in a bit of a cooking rut. Tired of the usual recipe roundup, I wanted to try something new. I had a bag of cauliflower rice from Costco and did not have a clue what to do with it. Cauliflower rice, in my opinion, is pretty flavorless so I wanted to be sure to cook it up with flavorful ingredients. I decided to try it out with my favorite combination of black beans and corn. This is how my southwestern cauliflower rice recipe was born.

My favorite thing about this recipe is that it’s pretty simple to make and only requires dirtying one pan. Does anyone else hate cooking and then having to deal with a bunch of dirty pots and pans afterward? ME!

It’s also a versatile meal. You can serve it over a salad like a burrito bowl salad or inside tortillas for taco night.
P.S. – It’s fantastic with some avocado (or guacamole) on top!

  1. This look so delish! I love the bright and bold colors. I can almost smell the flavors through my screen! I also love replacing starches with cauliflower. So much better for you!

  2. I love one pan recipes because the clean up is fast and so is the cooking. I think cauliflower rice needs as much flavor since it’s pretty bland like you mentioned. I love how you prepared this recipe and I’d love to make it.

  3. That looks über healthy!! I love how you mix cauliflower rice, black beans and avocado in it! I normally use a whole head of cauliflower, they taste pretty good after it’s cooked!

  4. I am always curious about all of the cauliflower recipes I see out there. And I haven’t been too excited about any of them. But add a little heat and spice to it and you have me sold. This sounds like something I would love to eat.

  5. I never use cauliflower in my food, so this is a great recipe and I think I will try it once I get cauliflower from the market.

    • You don’t really need to slow cook this since it only takes less than 30 minutes to whip up, but if you really want to you would just saute all the onions, veggie and soyrizo first then add the rest of the ingredients and slow cook for the least amount of time.
