Today I’m sharing my southwestern cauliflower rice recipe. Be sure to try this one out and let me know your thoughts!
I recently felt like I was in a bit of a cooking rut. Tired of the usual recipe roundup, I wanted to try something new. I had a bag of cauliflower rice from Costco and did not have a clue what to do with it. Cauliflower rice, in my opinion, is pretty flavorless so I wanted to be sure to cook it up with flavorful ingredients. I decided to try it out with my favorite combination of black beans and corn. This is how my southwestern cauliflower rice recipe was born.
My favorite thing about this recipe is that it’s pretty simple to make and only requires dirtying one pan. Does anyone else hate cooking and then having to deal with a bunch of dirty pots and pans afterward? ME!
It’s also a versatile meal. You can serve it over a salad like a burrito bowl salad or inside tortillas for taco night.
P.S. – It’s fantastic with some avocado (or guacamole) on top!
This southwestern cauliflower rice recipe is so nutritious and healthy. I always look for meals that have are full of fiber, plant protein, and veggies… and this has it all! It was also so darn easy to make that I will definitely be adding this one to my weekly meal rotations.
Ingredients
- 1 red bell pepper diced
- 1 sweet onion chopped
- 1/2 package soyrizo (I use this brand: El Burrito Organic Soyrizo)
- 16 oz riced cauliflower
- 3 cups frozen sweet corn
- 3 cups cooked black beans seasoned
- 1.5 TBS chili powder
- salt to taste
- garlic powder to taste
- avocado for toppings
- fresh cilantro for toppings
Servings: servings
Instructions
- Heat a large pan. Saute onions and peppers until softened (about 5 minutes).
- Next add in soyrizo to the pan. Cook for another 2 to 3 minutes. Then add in cauliflower rice.
- Add seasonings and adjust to taste. Mix all ingredients together well.
- Add corn and black beans. Continue cooking until corn is defrosted and cauliflower rice is tender.
